Pork Baby Back Ribs, Plum BBQ Glaze (red plums, rice wine vinegar, water, korean plum extract, shallot, garlic, morita chiles, chipotle powder, Dijon mustard, spanish paprika, black pepper, salt)

Our Plum & Morita BBQ Baby Back Pork Ribs can be grilled, pan-seared, baked, or even cooked 'sous vide' in the bag they came in. The following instructions are intended to be broadly applicable across various cooking techniques. These ribs are best cooked in a 2-step method, once over high heat for color and maillard reaction and again over low heat to allow the collagen and fat to render.

Step 1 - Remove ribs from packaging. Cook ribs briefly and carefully over high heat, be it in a non-stick pan, over a grill, or in the oven or broiler. The Plum & Morita BBQ Sauce is a reduction that contains a lot of sugar which is why this step needs to be done with a lot of attention, as sugar burns very readily.

Step 2 - Once both sides of the rack have good color, wrap the ribs in foil or place in a covered, oven-safe, pan. Cook the ribs for at least 1 hour at 250F in the oven, or on a similarly low-heat grill.

Step 3 - Once ribs are tender to your liking, portion them individually by standing the rack up vertically on your cutting board and slicing downwards between each bone, being sure to leave plenty of meat on each rib.
