Crispy Bacon & Caramelized Onion Savory Galette

Serves 4 | Ready in 45 minutes

This rustic tart is filled with smoky bacon, sweet caramelized onions, and melty cheese—all wrapped in a golden, flaky crust. It’s comfort food with a gourmet twist.

Ingredients:
4–6 slices Texas Iberico® Oak-Smoked Bacon, chopped

1 sheet Pie Dough (or your favorite store-bought or homemade crust)

2 medium South Tex Organics Yellow Onions, thinly sliced

1 tbsp Texas Olive Oil or butter

1 tsp fresh thyme leaves (or ½ tsp dried)

1 tsp balsamic vinegar (optional)

½ cup Soft Cheese or grated sharp cheddar

1 Farmhouse Delivery Egg, beaten (for egg wash)

Salt & pepper to taste

Optional: microgreens, hot honey, or fresh herbs for garnish

Instructions:

Cook the Bacon:
In a skillet over medium heat, cook chopped bacon until crispy. Remove and set aside on a paper towel. Reserve 1 tbsp of the fat in the pan.

Caramelize the Onions:
Add olive oil or butter to the skillet along with the onions and thyme. Cook on medium-low heat, stirring occasionally, for 15–20 minutes, until golden and soft. Add balsamic vinegar in the last minute, if using. Season with salt and pepper.

Assemble the Galette:
Preheat oven to 400°F. Roll out the dough on parchment. Spread caramelized onions in the center, leaving a 2-inch border. Top with cheese and crumbled bacon.

Fold & Bake:
Fold the dough edges over the filling to create a rustic shape. Brush edges with egg wash. Bake for 25–30 minutes until crust is golden and crisp.

Serve:
Let cool slightly. Garnish with herbs, microgreens, or a drizzle of hot honey for contrast.
