Fresh and punchy when raw, white onions bring a clean onion bite that works especially well in salsas, tacos, and chopped salads. Cook them down in a skillet or roast them and that sharper flavor softens into something sweeter and more mellow.

Keep a few on hand for weeknight cooking, whether you are starting a soup, building a stir-fry, topping tacos, or adding depth to beans, sauces, and braises.
