This workhorse of the mushroom world, also known as the button mushroom, is delicious whether caramelized in olive oil and garlic or sliced raw and tossed in a salad. The natural absorbency that incorporates seasoning so well also prompts some chefs to use a damp cloth for cleaning instead of running water.
