Ahhh, acorn squash; the quiet hero of the winter squashes. While we're huge fans of all things squash, this one really takes the cake as a weeknight meal favorite. Little do most people know, you can actually eat the skin (and it's delicious!), making the prep work as limited as it gets. Slightly less sweet than butternut squash, acorn plays well with most flavors whether it's sweet miso butter, fresh herbs and capers, or rich ground meats.
