Description
Dragon Tongue Beans are a striking heirloom variety, easily recognized by their creamy yellow pods adorned with vivid purple streaks. These tender, stringless beans offer a sweet, nutty flavor with a crisp texture, making them versatile for both raw and cooked dishes. When cooked, their vibrant coloration fades, but their rich taste remains, enhancing a variety of culinary creations.
Recipe
Blistered Dragon Tongue Beans with Charred Lemon & Chili Oil
Serves 4 | Ready in 15 minutes
This vibrant dish is quick to prepare and delivers big flavor: smoky, spicy, citrusy, and just a touch sweet. Perfect as a side dish or appetizer.
Ingredients:
1 lb Dragon Tongue Beans , trimmed
1 tbsp Texas olive oil
½ tsp chili flakes or a drizzle of SAVIR Jala Pepa Hot Sauce
1 lemon , halved
Flaky sea salt & freshly cracked black pepper
Optional: Shaved Mozz Co Queso Fresco or toasted almonds
Instructions:
Char the lemon:
Heat a dry skillet or grill pan over medium-high heat. Place lemon halves cut-side down until deeply browned (3–4 minutes). Remove and set aside.
Blister the beans:
In the same bread, add olive oil. Toss in beans and sauté for 5–6 minutes, stirring occasionally, until tender and blistered in spots. Season with salt, pepper, and chili flakes.
Finish:
Squeeze the charred lemon over the beans, toss to coat, and serve warm.
Optional toppings:
Add fresh cheese or nuts for richness and crunch.
Variations:
Toss with roasted cherry tomatoes or halved Village Farms grape tomatoes
Add to a grain bowl with Organic Farro , herbs, and a soft egg
Stir into a summer pasta with garlic and breadcrumbs
