Description
This mélange of autumn root vegetables are freshly peeled, trimmed, and diced to order by our in-house team of chefs. Toss the roasted, caramelized carrots, butternut squash, and parsnips in a house-made reduction of apple cider vinegar with notes of ginger and thyme.

Ingredients
Butternut Squash, Carrots, Parsnips, Apple Cider Vinegar Glaze (apple cider vinegar, garlic, ginger, fresh thyme, brown sugar, salt, pepper)
Recipe
Preheat oven to 425°F. Set glaze aside and add chopped veggies to a large baking dish or rimmed baking sheet. Toss in oil, and season with salt and pepper. Roast for 17-20 minutes or until tender with caramelized edges; turn midway for evening browning. Toss with apple cider glaze, salt, and pepper before serving.
