Whipped Honee Pistachio Chèvre Dip with Roasted Beets & Crackers

Serves 4–6 | Ready in 20 minutes

Creamy, bright, and topped with earthy-sweet roasted beets and a crunch of pistachios, this dip is an absolute knockout—perfect for grazing boards, holiday apps, or fancy snacking.

Ingredients:
1 wheel Rebel Cheese Vegan Honee Pistachio Chèvre

1 small Beet, roasted and diced

1 tbsp Olive Oil

1 tsp lemon zest

Salt & pepper to taste

Toasted pistachios, chopped (optional for extra crunch)

Instructions:
Whip the Cheese:
Let chèvre come to room temp. Place in a bowl and mix until smooth and spreadable. Add a drizzle of olive oil, lemon zest, and a pinch of salt and pepper to brighten it up.

Roast the Beet:
Wrap in foil and roast at 400°F for ~45 mins, or steam until tender. Cool, peel, and dice.

Assemble the Dip:
Spoon the whipped chèvre into a shallow bowl or spread onto a plate. Top with roasted beets, chopped pistachios, and a final drizzle of olive oil or agave.

Serve:
Surround with crackers and crudités. Perfect for dipping, swiping, and pairing with a crisp white wine or fizzy kombucha.
