Description

Recipe
Texas-Style Balsamic Glazed Red Onion Relish
Makes about 3 cups | Cook time: 45 minutes
Deeply caramelized with a sweet-tart balsamic finish, this red onion relish is a flavor-packed staple for burgers, cheese boards, sandwiches, and more. It’s the perfect way to use a big batch of beautiful Texas red onions.
Ingredients:
3 lbs Organic Texas Red Onions, halved and thinly sliced
2 tbsp Olive Oil
1 tbsp butter (optional for extra richness)
1½ tsp kosher salt
½ tsp black pepper
2 tbsp Keepers Harvest Raw Tallow Honey or brown sugar
½ cup balsamic vinegar
Optional: 1 tsp fresh thyme or rosemary
Instructions:
Sauté the Onions:
In a large Dutch oven or heavy-bottomed pan, heat oil (and butter if using) over medium heat. Add all the onions and stir to coat.
Slow Cook to Caramelize:
Reduce heat to medium-low. Add salt and pepper, and cook for 30–35 minutes, stirring often, until onions are soft, deeply colored, and sweet. Don’t rush—let them reduce and build flavor.
Glaze & Finish:
Stir in honey and balsamic vinegar. Simmer uncovered for another 10–15 minutes, stirring occasionally, until thickened and glossy. Add herbs if using. Let cool.
Store:
Transfer to a jar and refrigerate. Keeps for up to 2 weeks. Flavor gets better after a day!
How to Use It:
Pile onto Peeler Farm Wagyu Beef Patties or Brisket Sandwiches
Add to a Rebel Cheese & charcuterie board
Use as a topping for grain bowls, tacos, or flatbreads
Stir into cooked greens, pasta, or scrambled eggs
Swirl into Greek yogurt or goat cheese for a dip
