Description

Perfect for crafting juicy burgers, savory meatballs, or enhancing your favorite chili recipe, this ground pork brings a gourmet twist to any dish.

Texas Iberico® Pork Lettuce Wraps with Pickled Veg & Chili-Lime Drizzle
Serves 4 | Ready in 25 minutes
These fresh and flavorful lettuce wraps are everything you want in a warm-season meal: crisp, colorful, and loaded with juicy, savory pork—finished with a bright citrus kick.
Ingredients:
For the Pork Filling:
1 lb Texas Iberico® Ground Pork
1 tbsp Texas Olive Oil
2 cloves garlic, minced
1-inch piece fresh ginger, grated
2 tbsp soy sauce or tamari
1 tbsp Goody Greens Spicy Thai Stir Fry Sauce or a splash of lime juice + honey + chili flake
For the Pickled Veg (Quick Pickle):
1 Carrot, julienned
1 small South Tex Organics Red Onion, thinly sliced
2 tbsp rice vinegar
1 tsp honey
Pinch of salt
To Serve:
1 head Lone Star Lettuce Growers Butter Lettuce or Bibb lettuce (for wrapping)
Fresh cilantro & mint leaves
Sliced jalapeños (optional)
Chili-lime drizzle: mix juice of 1 lime + 1 tsp honey + 1 tsp chili oil or flakes
Crushed peanuts or toasted sesame seeds (optional garnish)
Instructions:
Quick Pickle the Veggies:
In a bowl, mix vinegar, honey, and salt. Add carrots and red onion. Toss and let sit while you prepare the pork.
Cook the Pork:
In a skillet over medium-high heat, heat olive oil. Add garlic and ginger, cook 30 seconds, then add ground pork. Cook, breaking up, until browned—about 6–8 minutes.
Add Flavor:
Stir in soy sauce and Goody Greens Stir Fry Sauce (or your substitute). Cook 1–2 minutes longer until slightly sticky and flavorful.
Assemble Wraps:
Layer a scoop of pork into each lettuce leaf. Top with pickled veggies, herbs, jalapeños, and a drizzle of chili-lime sauce.
Garnish & Serve:
Sprinkle with peanuts or sesame seeds if desired. Serve immediately with extra lime on the side.
Optional Add-Ons:
Sliced avocado for creaminess
Steamed jasmine rice or rice noodles for heartier wraps
