1. COOK BEEF & GREEN BEANS
Combine the green beans and shaking beef in a bowl and season lightly with salt and pepper. Heat a large sauté pan over high heat with 1 tablespoon of oil. Once the oil begins to smoke, carefully add the beef mixture. Cook for 3–4 minutes, using a spatula to break the beef into small pieces as it browns.
Roughly chop the fresh herbs. Once the beef is fully cooked, stir in the herbs and cook for 30 seconds until just fragrant. Transfer the mixture to a paper towel-lined plate or bowl to absorb any excess fat and let rest for a couple of minutes.
3. WARM THE RICE
Using the same pan, add the cooked white rice. Season lightly with salt and pepper and warm over low heat for 2–3 minutes, stirring occasionally.
4. BUILD LETTUCE WRAPS
Spoon a layer of warm rice into each lettuce leaf, followed by the shaking beef mixture. Drizzle with Nam Jim Jaew dipping sauce, and top each lettuce wrap with puffed rice for crunch
4. . SERVE
Arrange the lettuce wraps on serving plates and serve immediately alongside the chilled cucumber salad.
