This calorically dense and undeniably tasty tuber is just the thing for adding some interesting variety to your vegetable pantry. Excellent raw, pickled, steamed, roasted, or even deep-fried, these subterranean morsels have a deep artichoke heart-like flavor that's incredible when served with just about anything.

These plants are an incredibly sustainable source of calories and protein and grow readily without human input. It may be worth adding these to your cart just to spike a few in the ground to enjoy some beautiful sunflowers along with a proliferation of food underground. They do like to spread very prolifically and are very competitive with other plants, so be mindful of that if planting them.

The Sunchoke, also known commonly as the Jerusalem Artichoke (the result of a fun mispronunciation of the Italian word for sunflower, Girasole), Topinambur, Earth Apple, and much more, has been a staple food in North America since antiquity, notably having been prepared and served by the Indigenous peoples of the Americas to the Lewis & Clark expedition.

Like all other Helianthus (sunflowers) all parts of the plant are edible but this one is cultivated specifically for its tuberous root, hence the name Helianthus tuberosus. This little tuber is rich in a carbohydrate called inulin which isn't assimilated in the intestine and instead is processed by gut bacteria, so be warned that some preparations, especially raw ones, may leave oneself feeling a bit gassy.
