Recipe
Caramelized Texas 1015 Onion & Goat Cheese Tart

Serves 4–6 | Ready in 45 minutes

Sweet, savory, and perfect for brunch, appetizers, or a light dinner. This tart highlights the rich flavor of slow-cooked Texas 1015 onions with creamy cheese and flaky crust.

Ingredients:
2 large Organic Texas 1015 Sweet Yellow Onions, thinly sliced

1 tbsp Olive Oil

1 tbsp unsalted butter

1 tsp salt

½ tsp black pepper

1 tbsp Keepers Harvest Cotton Honey (optional, for extra depth)

1 sheet puff pastry or your favorite tart dough

½ cup Goat Cheese or soft goat cheese

1 tsp fresh thyme leaves

Optional: microgreens or arugula for garnish

Instructions:

Caramelize the Onions:
In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, salt, and pepper. Cook low and slow, stirring occasionally, for 20–25 minutes, until golden brown and jammy. Stir in honey if using.

Prep the Crust:
Preheat oven to 400°F. Roll out puff pastry onto a parchment-lined baking sheet. Score a ½-inch border around the edge.

Assemble the Tart:
Spread caramelized onions evenly over the center. Crumble goat cheese over the top and sprinkle with thyme.

Bake:
Bake for 20–25 minutes, until the crust is golden and puffed. Cool slightly before slicing.

Serve:
Top with fresh greens or an extra drizzle of olive oil. Serve warm or at room temp.
