Fresh and sturdy with a pleasantly earthy flavor, curly kale holds up well in everything from raw salads to slow-simmered soups. Massage it with olive oil and dressing for a tender salad, sauté it with garlic, add it to beans or stews, or roast the leaves until crisp.

Its hearty texture makes it especially useful for meal prep, since it stands up well to dressings and cooked dishes throughout the week.
