Recipe
1. Prep the crust

Preheat oven to 375°F.

Place the 2 pie crusts into pie dishes.

Prick the bottoms lightly with a fork.

Bake for 10 minutes, then set aside.

2. Cook the filling

Dice and cook the bacon until just crisp. Transfer to a towel-lined plate.

Thinly slice the sweet onions and cook in a bit of the bacon fat over medium heat until soft and lightly golden, about 10–15 minutes.

3. Make the custard

In a large bowl, whisk together:

12 eggs

1 quart half and half

a pinch of salt

black pepper to taste

4. Assemble

Divide the cooked onions, bacon, and shredded cheddar evenly between the 2 crusts.

Pour the egg mixture evenly over both.

5. Bake

Bake at 375°F for 35–45 minutes, until the centers are just set and the tops are lightly golden.

A knife inserted near the center should come out mostly clean.

6. Rest and serve

Let cool for 10–15 minutes before slicing.

Serve warm or at room temperature.
